What is Ceremonial Cacao ?
Ceremonies are something that has been followed and conducted from decades or even centuries, cacao is bit different more than a word ceremony we would like to share the knowledge and tradition behind this Cacao drink.
Research shows evidence Cacao was consumed in various different ways and various forms in central and south America 100’s or 1000’s years ago during Mesoamerican time (Pre-Columbian Foodways – John Edward Staller). We want to focus on liquid form. It was one drink that was consumed for every event or occasion or even not feeling active and for soldiers (Ritual Cacao – Leni Glapa & Felix Eidner)
Initial version of this drink was just cacao paste and hot water and later generations started adding herbs, flowers and spices that are available int he season to the cacao and started consuming same as their ancestors, by adding seasonal flowers and herbs it used to help immunity and overall wellbeing, some even started adding natural sweeteners. The core aspect of this process is Cacao is not heated to high heat or exposed to high heat during processing.
We respect the tradition and follow guidelines from history and process all our Cacao not just Ceremonial Cacao in low heat and traditional stone grinding technique.
Ceremonial Cacao is 100% Cacao, we use very specific Cacao from Honduras which is also a Native varietal and it is from our very good friend and farmer Efren (Atucún Chocolate Honduras) in-fact he was the first one to introduce us to this drink which he made for us in one of his visits.
We encourage you to read above mentioned books if interested in learning about Cacao and it’s greatness.
